1 lb Frozen or Fresh Shrimp
2 Large Russet Baking Potatoes
2 Tablespoons Olive Oil
1/2 cup Cheese (your choice)
4 Tablespoons Acadiana Steak Seasoning
2 Tablespoons Sour Cream
1 teaspoon Fresh Chives
To Taste Salt & Pepper
2 Tablespoons Butter

Directions

Preparing the Baked Potatoes
Wash the potatoes to remove any dirt. Pat dry w/ a paper towel. Using a paring knife or small sharp knife, proceed to make small incisions around each potato. This allows the steam to gradually escape from the potatoes during the cooking process. Once this is done, you will rub the Olive Oil all over the potatoes. Once they are coated, place them on a small baking sheet lined w/ parchment paper and place into your PRE-HEATED 375 degree oven.

Cooking the Shrimp
Using a medium sized skillet on med-high heat, melt the 2 Tablespoons of butter. Once the butter is melted add your fresh or frozen shrimp. Saute for approximately 2-3 minutes. Once cooked add your Acadiana seasoning. Once shrimp are cooked, remove from the skillet and place in a medium bowl.
Don’t OVERCOOK the shrimp, it will taste bland and rubbery. The perfect shrimp is cooked between 4 – 6 minutes total, depending on the size of the shrimp. Shrimp is ready opaque and has a light pink color to it. NOTE: Shrimp is best if enjoyed immediately.

Building Your Shrimp Potato
Remove your fully cooked baked potatoes from the oven. Place on your serving plate, using a sharp knife cut down the center horizontally. Add your favorite toppings like butter, cheese and whatever else you'd like. Then add your perfectly cooked Acadiana Shrimp to the potato, you can add your sour cream and chives at this point. If you are really into seasoning, you can add more Acadiana Seasoning or any other Cajun Seasoning you'd like. If you think that might be too much 'flavor' for you, just use the standard salt & pepper.

Notes
Preheat your oven at 375 before beginning this recipe.
While your potatoes are in the oven, you can shred your cheese if using block cheese or peel and devein your shrimp if using fresh shrimp.
